Morotskaka \u00e4r d\u00e4rf\u00f6r perfekt om man vill ha en nyttigare dessert och samtidigt vill\u00a0\u00e4ta billigt. F\u00f6r det g\u00e5r alldeles utm\u00e4rkt att \u00e4ta billigt \u00e4ven om man har en tight budget. Hur som helst, klassisk morotskaka \u00e4r ofta t\u00e4ckt av ett lager f\u00e4rskost, men jag g\u00f6r min morotskaka helt vegansk genom att toppa den med n\u00f6tter och fr\u00f6n som f\u00e5r en krispig yta n\u00e4r kakan gr\u00e4ddas i ugnen. Ta fram en ny bunke. Hacka cashewn\u00f6tterna grovt och blanda tillsammans med solrosfr\u00f6n, kokosolja och kokossocker till en kladdig massa. Str\u00f6ssla \u00f6ver n\u00f6tblandningen p\u00e5 kakan och gr\u00e4dda den i 30-45 minuter i mitten av ugnen. Den \u00e4r klar n\u00e4r toppingen f\u00e5tt en fint gyllenbrun f\u00e4rg.<\/div>\n

Den h\u00e4r morotskakan<\/strong> har vuxit fram i olika steg. Jag \u00e4lskar havregrynsgr\u00f6t och kan \u00e4ta det tre g\u00e5nger om dagen ibland. Det hela b\u00f6rjade med att jag en dag tillagade gr\u00f6ten lite f\u00f6r l\u00e4nge s\u00e5 att den blev ungef\u00e4r som att den hade bakats i ugnen. Ytan blev liksom krispig p\u00e5 n\u00e5got s\u00e4tt. Den dagen hade jag l\u00e4mpligt nog smaksatt gr\u00f6ten med kardemumma och kanel, s\u00e5 hela frukosten smakade som en dessert. En annan dag provade jag att ha rivna mor\u00f6tter i gr\u00f6ten, vilket gav en helt fantastisk smak. Jag kom d\u00e5 att t\u00e4nka p\u00e5 min bakade gr\u00f6t jag gjort av misstag en tid innan och t\u00e4nkte att det borde bli en succ\u00e9 att kombinera den bakade gr\u00f6ten med morotsgr\u00f6ten f\u00f6r att g\u00f6ra en morotskaka. Sagt och gjort. Med ett par chia\u00e4gg och lite vegetabilisk mj\u00f6lk f\u00f6rvandlades tv\u00e5 gr\u00f6trecept till ett dessertrecept. F\u00f6r att optimera det ytterligare toppade jag kakan med mina favorittoppings som jag n\u00e4stan alltid har p\u00e5 gr\u00f6ten – n\u00f6tter och fr\u00f6n. Och med det gjort hade jag det perfekta receptet p\u00e5 en god och nyttig morotskaka som dessutom \u00e4r billig att tillaga.
