Jag fick erbjudandet om att vara med i en str\u00f6mmingst\u00e4vling i samarbete med Hotel Skeppsholmen<\/b><\/a> vilket jag s\u00e5klart nappade (k\u00e4nde f\u00f6r en ordvits idag) p\u00e5. Uppdraget gick ut p\u00e5 att skapa en str\u00f6mmingsinl\u00e4ggning p\u00e5 det s\u00e4tt jag vill avnjuta den och receptet kommer bed\u00f6mas utifr\u00e5n smakkombination, innovation och presentation. Jag har inga h\u00f6ga f\u00f6rv\u00e4ntningar men det var en kul utmaning och h\u00e4r kommer mitt bidrag.<\/div>\n

Min tanken med receptet var att bara anv\u00e4nda svenska r\u00e5varor och att g\u00f6ra den v\u00e5r\/f\u00f6rsommar inspirerad. Jag gick ut och plockade den f\u00f6rvildade gr\u00f6sl\u00f6ken som v\u00e4xer h\u00e4r bakom huset tillsammans med dom f\u00f6rsta sp\u00e4nd kirsk\u00e5lsbladen som letat sig upp och en handfull l\u00f6ktrav. Jag ville \u00e5t den lite friska kryddiga smaken av gr\u00e4sl\u00f6ken och l\u00f6ktraven tillsammans med kirsk\u00e5len som n\u00e4stan g\u00e5r \u00e5t sellerih\u00e5llet men som symboliserar v\u00e5r. Dom mortlade jag ihop med lite rapsolja, salt och pepparrot till en pasta som jag la mellan str\u00f6mmingsfil\u00e9erna. Fil\u00e9erna v\u00e4ndes i grovmalet r\u00e5gmj\u00f6l blandat med lite str\u00f6br\u00f6d och salt. F\u00f6r att anamma den svenska v\u00e5ren ytterligare grillade jag fil\u00e9erna ist\u00e4llet f\u00f6r att steka dem. Dessutom sl\u00e4ngde jag ner lite \u00e4pplekvistar i grillen f\u00f6r att ge dem en lite \u00e4ppelr\u00f6kt ton. Jag varvade de lite sotiga str\u00f6mmingsfil\u00e9erna i en glasburk med rabarber (en intressant syra) och pepparrot i skivor (f\u00f6r pepprigheten d\u00e5 jag inte anv\u00e4nde peppar) och h\u00e4llde p\u00e5 en vanlig \u00e4ttikslag. Jag g\u00f6r min \u00e4ttikslag med lite mindre socker eftersom jag inte tycker om n\u00e4r det blir allt f\u00f6r s\u00f6tt och eftersom dessa fil\u00e9er inte ska ligga s\u00e5 l\u00e4nge i lagen.<\/div>\n

Jag avnjuter dem sen helst p\u00e5 en kn\u00e4ckebr\u00f6dsmacka med potatis som \u00e4r mosade med en klick sm\u00f6r. P\u00e5 det, gr\u00e4ddfil, hackad gr\u00e4sl\u00f6k och f\u00f6r presentationen och v\u00e5rk\u00e4nslans skull, lite \u00e4tliga blommor. Den h\u00e4r g\u00e5ngen blev det violpens\u00e9er.<\/div>\n

SOTADE STR\u00d6MMINGSFIL\u00c9ER MED V\u00c5R\u00d6RTER, PEPPARROT OCH RABARBER<\/u><\/p>\n

En n\u00e4ve f\u00e4rska \u00f6rter av \u00f6nskat slag. Jag anv\u00e4nde gr\u00e4sl\u00f6k, l\u00f6ktrav och kirsk\u00e5l.
1 msk riven pepparrot
2 tsk rapsolja
En nypa salt<\/p>\n

300 g str\u00f6mmingsfil\u00e9er (j\u00e4mt antal)
R\u00e5gmj\u00f6l och lite str\u00f6br\u00f6d till pannering<\/p>\n

Ev. \u00e4ppelkvistar eller annat fruktr\u00e4d att l\u00e4gga p\u00e5 grillen<\/p>\n

En rabarberstj\u00e4lk
En tumstor bit pepparrot<\/p>\n

\u00c4ttisklag<\/u>
5 dl vatten
2 dl socker
1,25 dl \u00e4ttika
1 msk salt<\/p>\n

Blanda alla ingredienser till \u00e4ttikslagen i en kastrull och koka upp. L\u00e5t svalna. Hacka och motrla de f\u00e4rska \u00f6rterna, riv i pepparroten, h\u00e4ll i oljan och saltet och blanda ihop till en gr\u00f6n pasta. Sk\u00f6lj och torka str\u00f6mmingsfil\u00e9erna och klipp eventuellt bort ryggfenan. L\u00e4gg fill\u00e9erna tv\u00e5 och tv\u00e5 med skinnsidan ut\u00e5t och lite \u00f6rtpasta emellan. V\u00e4nd i paneringen och l\u00e4gg p\u00e5 en het grill. Grilla ett par minuter p\u00e5 vardera sida tills dom f\u00e5tt f\u00e4rg. L\u00e5t svalna. Varva fil\u00e9erna med pepparroten och rabarbern i en glasburk eller sk\u00e5l och h\u00e4ll p\u00e5 \u00e4ttikslagen. L\u00e5t st\u00e5 svalt \u00e5tminstone 6 timmar men g\u00e4rna \u00f6ver natten. Servera med det du tycker \u00e4r godast!<\/p>\n
