Idag vaknade vi<\/strong> av regnet som smattrade mot f\u00f6nsterrutan. Sn\u00f6n sm\u00e4lter ungef\u00e4r lika snabbt som en glass i solsken och den d\u00e4r juliga k\u00e4nslan som infann sig f\u00f6rra veckan \u00e4r nu som bortbl\u00e5st. Det gr\u00e5 och regniga v\u00e4dret passade dock bra in p\u00e5 mitt hum\u00f6r idag. Pga f\u00f6r mycket tr\u00e4ning i f\u00f6r kallt v\u00e4der har jag str\u00e4ckt eller \u00f6veranstr\u00e4ngt en av de nedre magmusklerna (tror jag) och det g\u00f6r ONT. Jag hoppas att det blir b\u00e4ttre de n\u00e4rmsta dagarna f\u00f6r jag har varken tid eller lust med detta.<\/p>\n

Den h\u00e4r veckan kommer precis som f\u00f6rra veckan vara r\u00e4tt s\u00e5 intensiv. Jag forts\u00e4tter att jobba med min hemsida och nu v\u00e4ntar jag p\u00e5 att den ska flyttas till mitt nya webbhotell, vilket verkar ta apl\u00e5ng tid. Jag som bara vill b\u00f6rja f\u00f6rverkliga mina planer och f\u00f6rvandla kladdiga anteckningar och skisser till en snygg hemsida. S\u00e5 l\u00e4nge f\u00e5r jag fokusera p\u00e5 att skriva texter och artiklar, redigera tonvis med bilder, planera f\u00f6r fotografering och s\u00e5 fixa med ungef\u00e4r 200 ton grafiskt material. Men allt det d\u00e4r tillsammans \u00e4r det roligaste jag vet, s\u00e5 jag klagar inte \ud83d\ude42 Och p\u00e5 mitt jobb har jag v\u00e4rldens b\u00e4sta kolleger som alltid g\u00f6r mig p\u00e5 superbra hum\u00f6r s\u00e5 jag \u00e4r faktiskt v\u00e4ldigt n\u00f6jd med livet trots den f\u00f6rbaskade muskeln\/senan\/whatever.<\/p>\n

Under intensiva veckor som denna och den f\u00f6rra \u00e4r det extra viktigt att jag har bra recept p\u00e5 lager. Som vanligt ska det g\u00e5 snabbt att laga och s\u00e5 ska det vara fullproppat med n\u00e4ring s\u00e5 att man kan jobba effektivt och m\u00e5 bra samtidigt. Dagens recept p\u00e5 kr\u00e4mig quinoagr\u00f6t \u00e4r ett s\u00e5nt recept som jag alltid kommer tillbaka till n\u00e4r jag s\u00f6ker efter just l\u00e4ttlagade, n\u00e4ringst\u00e4ta och supergoda matr\u00e4tter som g\u00e5r att \u00e4ta b\u00e5de som frukost och lunch\/middag. Quinoa \u00e4r inte bara ett matgryn, det g\u00e5r utm\u00e4rkt att koka gr\u00f6t p\u00e5 det. Byt bara ut vattnet mot vegetabilisk dryck och tills\u00e4tt en gnutta \u00e4kta vaniljpulver s\u00e5 \u00e4r du hemma.<\/p>\n

Quinoagr\u00f6t med vanilj<\/h2>\n

1 dl vit, okokt quinoa
\n2 krm \u00e4kta vaniljpulver
\n3 dl vegetabilisk dryck (exempelvis soja, havre eller mandel)
\n1 dl vatten<\/p>\n

Blanda alla ingredienser i en kastrull och l\u00e5t koka upp. S\u00e4nk v\u00e4rmen och l\u00e5t gr\u00f6ten sjuda p\u00e5 medelh\u00f6g v\u00e4rme i 15-20 minuter, eller tills quinoan absorberat v\u00e4tskan och k\u00e4nns mjuk. Om det beh\u00f6vs kan du tills\u00e4tta lite mer vegetabilisk dryck och l\u00e5ta gr\u00f6ten koka n\u00e5gra minuter till. Servera med b\u00e4r, n\u00f6tter och vegetabilisk dryck.<\/p>\n

Today we woke up<\/strong> by the sound of rain pouring down outside or bedroom window. The snow is melting as quickly as an icecream in the sun and that lovely Christmas feeling from last week is almost gone. This grey and rainy weather did however match my spirit today. I\u2019ve been working out too much lately (in too cold weather) and because of that gotten some sort of tension in the lower abdominals and it HURTS. I hope it will get better soon because I have neither time nor am I in the mood for this.\u00a0<\/em><\/p>\n

This week is going to be as intense as the previous one. I continue to work with my website and right now I\u2019m waiting for my domain to be transferred to my new web host. It seems to take like forever and I\u2019m just sitting here, waiting to turn my sketches and notes into a beautiful website. While I wait I\u2019m focusing on writing articles, editing billions of photos, planning a photoshoot and of course, creating all the graphics that needs to be done.\u00a0 But those things are the funniest things I know, so I\u2019m not complaining \ud83d\ude42 Plus, I have the best collegues ever, always making me smile. So, despite the darn muscle\/tendon\/whatever I\u2019m very happy with my life.\u00a0<\/em><\/p>\n

During intense weeks like this and the previous one, it\u2019s so important to have easy recipes on hand. Like usual I want short prep times, but still I want the food to be full of nutrients. Quinoa porridge is a recipe I always come back to when I need to stay focused and work effectively. It is easy to prepare, full of nutrients and of course super yummy.\u00a0<\/em><\/p>\n

Quinoa porridge with vanilla<\/h2>\n

1 dl white quinoa
\n1\/2 tsp pure vanilla powder
\n3 dl plant milk of your choice
\n1 dl cold water<\/p>\n

Pour the ingredients into a saucepan and bring to a boil. Lower the heat and let cook for about 15-20 minutes, or until the quinoa has absorbed the liquid. If it absorbs the milk too fast you can add some more and let cook for another few minutes. Serve with berries, nuts and more plant milk.<\/p>\n
