Pepparkaksdeg \u00e4r antagligen<\/strong> det b\u00e4sta jag vet. N\u00e4r jag bakade h\u00e4romdagen s\u00e5 \u00e5t jag pepparkaksdeg till lunch. Jag vet att det inte \u00e4r den h\u00e4lsosammaste lunchen och inte heller den mest n\u00e4ringst\u00e4ta, men en g\u00e5ng om \u00e5ret g\u00f6r v\u00e4l \u00e4nd\u00e5 ingenting?<\/p>\n

Jag har haft stora problem med att f\u00e5 till ett pepparkaksrecept som \u00e4r b\u00e5de glutenfritt och veganskt, men nu har jag \u00e4ntligen lyckats. Degen \u00e4r inte lika fast och smidig som en deg med vetemj\u00f6l, s\u00e5 att anv\u00e4nda stora pepparkaksformar och\/eller formar med m\u00e5nga sm\u00e5 detaljer kan vara lite klurigt. Jag h\u00f6ll mig d\u00e4rf\u00f6r till den klassiska formen som ser ut som en blomma och s\u00e5 n\u00e5gra hj\u00e4rtan och stj\u00e4rnor. De med hj\u00e4rt- och stj\u00e4rnform lyckades jag dock br\u00e4nna i ugnen s\u00e5 de fick inte vara med p\u00e5 bild, hehe.<\/p>\n

Glutenfria & veganska pepparkakor<\/h2>\n

30-40 st<\/em><\/p>\n

4 dl glutenfri fin mj\u00f6lmix
\n100 g smakneutral kokosolja eller mj\u00f6lkfritt margarin
\n1 dl kokossocker
\n1\/2 dl m\u00f6rk sirap
\n1 msk kanel
\n1 tsk mald ingef\u00e4ra
\n1 tsk malda nejlikor
\n2 krm salt
\n1 krm bikarbonat
\n1 msk vatten<\/p>\n

Blanda alla ingredienser utom vattnet i en matberedare. N\u00e4r du har en n\u00e5got s\u00e5n\u00e4r fast degmassa tills\u00e4tter du vattnet och mixar snabbt igen. Ta upp degmassan\u00a0och kn\u00e5da den snabbt s\u00e5 att du f\u00e5r en fin deg.<\/p>\n

L\u00e4gg degen p\u00e5 en tallrik och t\u00e4ck \u00f6ver med plastfolie. L\u00e5t vila i minst 1 timme.<\/p>\n

V\u00e4rm ugnen till 170 grader.<\/p>\n

Kavla ut degen tunt och ta ut kakor med hj\u00e4lp av formar.<\/p>\n

L\u00e4gg kakorna p\u00e5 en pl\u00e5t och gr\u00e4dda i ca 10 minuter eller tills kakorna h\u00e5rdnat och f\u00e5tt lite f\u00e4rg. L\u00e5t svalna p\u00e5 pl\u00e5ten innan du flyttar dem. Observera att du f\u00e5r gr\u00e4dda flera pl\u00e5tar s\u00e5 det \u00e4r bra om du har \u00e5tminstone 2 pl\u00e5tar.<\/p>\n

Gingerbread dough is<\/strong> probably the best thing I know. When I made gingerbread cookies the other day I had gingerbread dough for lunch. The number of baked cookies\u00a0was remarkably smaller than I had imagined. Gingerbread dough is probably not the healthiest or most nutritious lunch there is, but once a year? Can’t hurt you \ud83d\ude09\u00a0<\/em><\/p>\n

I’ve tried a lot of different gingerbread cookie recipes since I learned that I’m allergic to gluten. I’ve also tried to come up with a recipe that is also vegan, which has made it even more difficult. But now my friends, now I’ve succeeded! The dough isn’t as flexible as one with wheat flour and I recommend that you don’t use any large cookie cutters, or cutters with lots of details. Why? Because they tend to break when you move them from the counter\/table to the baking sheet. So, stick with the smaller ones, like heart or star shaped ones.

Glutenfree & vegan gingerbread cookies<\/h2>\n

30-40 cookies<\/em><\/p>\n

4 dl glutenfree flour mix
\n100 g milkfree butter
\n1 dl coconut sugar
\n1\/2 dl dark syrup
\n1 tbsp cinnamon, ground
\n1 tsp ginger, ground
\n1 tsp clove, ground
\n1\/3 tsp salt
\n1\/3 tsp bicarbonate of\u00a0soda
\n1 tbsp water<\/p>\n

Add all the ingredients except the water into a mixer. When you have a somewhat solid dough, add the water and mix again. Work the dough with your hands until it’s a solid piece of dough. Put it on a plate and place in the refrigerator for at least an hour.<\/p>\n

Heat the oven to 170\u00b0C.<\/p>\n

Roll the dough and use the cookie cutters to make\u00a0cookies.<\/p>\n

Transfer the cookies from the encounter or table to a baking sheet and collect the remaining dough and repeat the roll-cut-transfer-process. Bake the cookies for about 10 minutes and let cool on the baking sheet. You’ll have to bake cookies several times so it’s preferable if you have at least 2 baking sheets to use.\u00a0
