Sommaren \u00e4r b\u00e4sta<\/strong> \u00e5rstiden f\u00f6r en frukt- och b\u00e4r\u00e4lskare som jag. De f\u00f6rsta persikorna och nektarinerna \u00e4r \u00e4ntligen h\u00e4r och jag byter mer \u00e4n g\u00e4rna ut middagen mot en, tv\u00e5 eller tre av dessa sommarfrukter. Dessutom \u00e4r rabarbernas tid h\u00e4r och jag anv\u00e4nder deras h\u00e4rliga syrlighet f\u00f6r att smaks\u00e4tta allt fr\u00e5n desserter till somriga sallader och goda frukostar.<\/p>\n

Det \u00e4r som att v\u00e4rmen drar ur alla smaker ur frukterna och resultatet blir en smakfest utan dess like.<\/p>\n

Dagens recept<\/strong> \u00e4r en fantastiskt god sallad som inneh\u00e5ller allt det b\u00e4sta med sommaren – sparris, ugnsbakade rabarber och persikor, aprikoser och s\u00e5 f\u00e4rska tomater och r\u00f6dl\u00f6k. De ugnsbakade frukterna blir s\u00e5d\u00e4r h\u00e4rligt mjuka och rinniga och ger hela salladen en fyllig och mjuk smak. Rabarbernas syrlighet m\u00f6ter upp denna mjukhet perfekt och hela salladen har en perfekt balans av s\u00f6tt och syrligt.<\/p>\n

\n4 sm\u00e5 stj\u00e4lkar rabarber

\n3 tomater
\n1 aubergine
\n1 r\u00f6d l\u00f6k
\nn\u00e5gra kvistar f\u00e4rsk timjan<\/p>\n

V\u00e4rm ugnen till 200 grader. B\u00f6rja med att ansa rabarberna och sk\u00e4r dem sedan i tunna skivor. Dela sparrisen i 2-3 cm l\u00e5nga bitar och l\u00e4gg dem tillsammans med rabarberna p\u00e5 en bakpl\u00e5tspapperskl\u00e4dd pl\u00e5t.<\/p>\n

Dela persikorna och aprikoserna och ta bort k\u00e4rnorna. Sk\u00e4r sedan frukterna i klyftor och l\u00e4gg p\u00e5 pl\u00e5ten med rabarber och sparris. Dela auberginen och sk\u00e4r den i sm\u00e5 bitar. L\u00e4gg ocks\u00e5 dessa bitar p\u00e5 pl\u00e5ten och ringla \u00f6ver lite olivolja. Blanda runt gr\u00f6nsakerna s\u00e5 att alla bitar blandas med oljan. S\u00e4tt in pl\u00e5ten i ugnen och baka i ungef\u00e4r 20 minuter.<\/p>\n

Sk\u00e4r under tiden tomaterna i tunna skivor och finhacka r\u00f6dl\u00f6ken. Blanda samman i en sk\u00e5l och blanda sedan ner de ugnsbakade gr\u00f6nsakerna i tomat- och l\u00f6kblandningen. Garnera med n\u00e5gra kvistar f\u00e4rsk timjan och servera direkt.<\/p>\n
