\nOm ungef\u00e4r en<\/strong> vecka, n\u00e4sta tisdag f\u00f6r att vara exakt, \u00e4r det kanelbullens dag. Jag \u00e4 l s k a r kanelbullar, men sedan jag fick reda p\u00e5 att jag inte t\u00e5l gluten s\u00e5 har jag faktiskt inte f\u00f6rs\u00f6kt mig p\u00e5 att baka bullar en endaste g\u00e5ng. Det var typ fyra \u00e5r sedan s\u00e5 ni kan ju t\u00e4nka er min kanelbulle-abstinens! Jag tror att jag har inbillat mig att det inte g\u00e5r att baka glutenfria bullar och att, om det mot all f\u00f6rmodan skulle g\u00e5, inte skulle smaka det minsta gott. S\u00e5 fel jag hade.<\/p>\n

\nF\u00f6r er som<\/strong> provat att baka glutenfritt tidigare vet ni att det \u00e4r lite annorlunda att baka med glutenfritt mj\u00f6l. Degen h\u00e5ller till exempel inte ihop lika bra som en deg med gluten, vilket \u00e4r logiskt eftersom det gluten fungerar just som bindemedel. Jag tyckte att det var lite sv\u00e5rt att f\u00e5 till fina kringlor av degen, men om man rullade ut degremsorna ungef\u00e4r som n\u00e4r man bakar lussekatter, s\u00e5 gick det b\u00e4ttre. Det l\u00e4ttaste var att rulla ihop degen och sedan sk\u00e4ra ett par centimeter tjocka skivor av den. Man f\u00e5r helt enkelt testa sig fram och se vad man tycker fungerar bra. Jag kan t\u00e4nka mig att det beror lite p\u00e5 vilka mj\u00f6lsorter man anv\u00e4nder. N\u00e4r jag bakade anv\u00e4nde jag mig av en f\u00e4rdig mj\u00f6lmix (en med ljusa mj\u00f6lsorter) s\u00e5 jag kan inte riktigt s\u00e4ga hur det blir om man g\u00f6r mj\u00f6lblandningen sj\u00e4lv. Kanske beh\u00f6ver man tills\u00e4tta n\u00e5gon form av bindemedel, t.ex. fiberhusk? Hojta g\u00e4rna till om ni testar.<\/p>\n

Ett sista tips<\/strong> innan jag delar med mig av receptet \u00e4r f\u00f6ljande: sn\u00e5la inte med fyllningen. Glutenfria bullar blir lite torrare \u00e4n traditionella bullar s\u00e5 att ha lite extra fyllning g\u00f6r bara gott. Kom ocks\u00e5 ih\u00e5g att alltid v\u00e4rma bullarna lite grann innan du \u00e4ter dem, det g\u00f6r bullarna kr\u00e4migare och framh\u00e4ver fyllningens smak lite mer. \n1 dl kokossocker
\n1\/2 tsk salt
\n2 tsk malen kardemumma
\n12 dl mj\u00f6l (blanda exempelvis rismj\u00f6l, havremj\u00f6l och majsmj\u00f6l, eller k\u00f6p en f\u00e4rdig mj\u00f6lmix).<\/p>\n

Fyllning<\/h4>\n

50 g mj\u00f6lkfritt sm\u00f6r
\n1 dl kokossocker
\n1 msk kanel (eller kardemumma)<\/p>\n

Sm\u00e4lt mj\u00f6lkfritt sm\u00f6r till pensling
\nP\u00e4rlsocker att str\u00f6 \u00f6ver bullarna
\nSmula j\u00e4sten i en bunke. Sm\u00e4lt margarinet och blanda ner havredrycken. L\u00e5t svalna till en temperatur p\u00e5 37 grader. H\u00e4ll margarinet \u00f6ver j\u00e4sten och r\u00f6r om tills j\u00e4sten l\u00f6sts upp. Blanda ner kokossocker, salt och kardemumma. Tills\u00e4tt mj\u00f6let, lite i taget och r\u00f6r om tills du har en l\u00f6s deg.<\/p>\n

Observera att degen ska vara ganska l\u00f6s, den sv\u00e4ller och \u201dtorkar\u201d under j\u00e4sningen, s\u00e5 tills\u00e4tt inte mer mj\u00f6l \u00e4ven om den k\u00e4nns l\u00f6s.<\/p>\n

L\u00e5t degen j\u00e4sa under bakduk i 30 minuter.<\/p>\n

Arbeta samman degen p\u00e5 mj\u00f6lat bakbord. Dela sedan degen i tv\u00e5 delar och kavla ut en del i taget till rektangul\u00e4ra plattor. Bred ett lager sm\u00f6r p\u00e5 degen, str\u00f6ssla \u00f6ver kokossocker och kanel med en finmaskig sil. Sedan \u00e4r det dags att forma bullar. Du kan 1) rulla ihop degen och sk\u00e4ra rullarna i ca 2 cm tjocka skivor och l\u00e4gga p\u00e5 en pl\u00e5t eller 2) vika degplattan dubbel och sk\u00e4ra ca 1 cm tjocka remsor av degen. Tvinna sedan degremsan och snurra den runt fingrarna till en bullformad skapelse och f\u00e4st sedan \u00e4ndarna under bullen.<\/p>\n

L\u00e4gg bullarna i bullformar och l\u00e5t j\u00e4sa p\u00e5 en pl\u00e5t i ytterligare 30 minuter. Upprepa proceduren med den \u00e5terst\u00e5ende deghalvan.<\/p>\n

Pensla de f\u00e4rdigj\u00e4sta bullarna med sm\u00e4lt sm\u00f6r och str\u00f6 \u00f6ver lite p\u00e4rlsocker. Gr\u00e4dda mitt i ugnen i 250 grader i 10-12 minuter.<\/p>\n

Det g\u00e5r finfint att frysa bullarna.<\/p>\n
